About Ethiopia Harar
If there is one coffee that has managed to polarize the entire coffee industry for centuries, it's the revered Ethiopia Harrar.
A coffee with a problematic future, some predicting it's likely to disappear within the next decade.
Harrar is difficult to source, and half-decent Harar is as rare as rocking horse shite.
It's also costly in comparison to other alternatives.
Ethiopia Harar is a dry processed coffee from the delicate heirloom varietal Harrar (sometimes spelled Harar).
Harar is a special place, and Yemen is the oldest type and original species of coffee. With Yemen all but disappearing from the coffee spectrum, it's likely Harrar will soon follow.
Grown in East Africa at high altitudes, the availability of Harrar continues to decline each year.
Some say it's from the impact of global warming, droughts and meagre yields on the sensitive varietal (sometimes less than 30%).
Others believe farmers can't justify growing a fragile varietal like Harar with such high risks of failure from abnormal weather conditions.
All it takes is an unexpected storm, rains at the wrong time, or an extended dry period. Significant drops in crop yields can lead to near-total harvest loss.
Coffee farmers are not silly; they always consider using their lands for different food crops.
So we see farmers removing historic heirloom coffee trees and planting crops for higher-demand foods.
Many coffee roasters abandoned Harrar in their line-up more than a decade ago. It is too hard to source, too inconsistent to roast and, more importantly, too expensive for what you might get in the cup.
But that is missing the point.
Harrar is one of the coffee world's most romantic and profound varietals.
Let's not write off Harrar just yet. Other varietals and regions cannot replicate its distinctive and alluring characteristics.
We love the sweet, fragrant grinds, the juicy cup of red and blueberries with orange citrus acidity, and a clean caramel finish.

Roasting coffee is a precise science. These days, computer profiles perform most of the automated tasks for controlling a roast profile. However, through better quality control via tasting, testing and optimization, we can make a big difference to the finished product through setting special parameters.

Ground coffee is poor value
Whole beans are the only way to enjoy freshly roasted coffee.
The moment coffee beans are ground, most of the essential, active compounds in ground coffee oxidize rapidly, losing vitality, aroma, flavour and body.
Ground coffee barely lasts 15 minutes; even sealed packs lose more than 80% of the critical essence in 2 weeks.
Unfortunately, once you open and close that pack, it's game over, and the ground coffee continues to stale at 20x the rate of whole beans inside of a sealed, unopened pack.
If you love coffee, please don't waste money buying pre-ground packs; you only get a small part of the wonderful coffee experience.
Buy a decent grinder and purchase whole beans; it makes a huge difference in aroma, flavour, and enjoyment.
