Using & Brewing Wet-Hulled Sulawesi Coffee
Sulawesi Kalossi is processed using the traditional wet-hulled method (Giling Basah), similar to other famous Sumatran coffees. This process is key to developing its signature bold flavor and heavy body.

Grind Setting: Like all wet-hulled coffees, Sulawesi Kalossi typically requires a slightly finer grind setting than washed or natural coffees.

Optimal Rest Period (De-Gas): For the best flavor, these beans need an extended de-gas period after the roast date. The most significant flavor development occurs between days 9 and 14 post-roast. We recommend a typical rest period of 7 to 10 days (potentially shorter in warmer climates).
A Note on Freshness: Wet-hulled coffees undergo "rapid flavor transformations" during the first week. If your freshly roasted coffee tastes "weird" initially, don't worry—it’s a normal part of its lifecycle! Please wait for the 7-10 day development period to complete; the patience is well worth the reward of a fully developed, wonderful cup.

Ground coffee is poor value
Whole beans are the only way to enjoy freshly roasted coffee.
The moment coffee beans are ground, most of the essential, active compounds in ground coffee oxidize rapidly, losing vitality, aroma, flavour and body.
Ground coffee barely lasts 15 minutes; even sealed packs lose more than 80% of the critical essence in 2 weeks.
Unfortunately, once you open and close that pack, it's game over, and the ground coffee continues to stale at 20x the rate of whole beans inside of a sealed, unopened pack.
If you love coffee, please don't waste money buying pre-ground packs; you only get a small part of the wonderful coffee experience.
