It has been a long wait to secure a decent lot - 5 years seems like forever.
These coffees are wild-grown in the ancient Toraja region on the small Indonesian island of Sulawesi (sometimes known by its Dutch-appointed name Celebes).
Sulawesi Kalossi is a super punchy coffee with low acid, rich and bold body, sublime dark and earthy notes of chocolate, spice, and cocoa with nectarine and white grape acidity.
Indeed, it is a "bucket list" coffee experience.
Perfect for hard-hitting espresso enthusiasts, a coffee with complex candy sweetness contrasting the heavy body and earthy tones.
Please take note when using fresh Sulawesi coffee.
Sulawesi is similar to other Sumatran coffees processed in the traditional wet-hulled method.
Like all Sumatrans, Sulawesi Kalossi requires a finer grind setting and more extended de-gas from the roast date to allow flavour development and stabilization.
Typical rest periods for Sulawesi coffees are 7 to 10 days from roast date. That may reduce slightly in warmer weather.
All wet-hulled coffees undergo a series of "rapid flavour transformations" during the de-gas (first week after roasting).
Flavours can change so fast and dramatically from day to day that you would hardly recognize the coffee one day to the next in the first ten days from the roast date.
These most significant reactions occur between days 4 and 10 from the roast date.
At certain times, the coffee may appear less than optimal, or it may even taste weird.
Still, it's just a normal part of the standard lifecycle in reactions of fresh roasted Sulawesi and Sumatran coffees processed by wet hulling.
Then suddenly, the coffee turns nice, a wonderful experience.
If you ever encounter any of these responses from a freshly roasted coffee, please wait a few days for the development period to complete, and the rewards will be well worth it.

Like all wet-hulled coffees, Sulawesi requires a much finer grind. For those of you new to using Single Origin Sulawesi coffees, please ensure you set the grinder fine enough for espresso extraction/
