You may be wondering why Decaf coffees are so expensive.
Well, there's a good reason, and it has to do with double shipping and processing before it's even roasted.
Swiss Water is a patented caffeine removal process without dangerous or harsh chemicals.
There is also the Mountain Water process that achieves the same outcome - removing most of the caffeine without the use of chemicals.
The Swiss Water Decaf company employ some of the world's best raw coffee buyers who travel the globe evaluating and selecting grades of coffee.
It is a widely held belief among consumers that Decaf necessitates inferior quality, but this is a misconception.
The opposite is true: Decaf coffees are some of the best grades.
With the Swiss Water Process, all raw coffee ships by sea from coffee farms around the globe to a central facility in Canada for processing.
The end product is a raw coffee with around 99% of the caffeine removed.
Raw Decaf coffee (unroasted) travels from Canada to country importers, selling Swiss Water Decaf to local or domestic coffee companies.
Local coffee companies purchase raw Decaf coffees to roast as they deem suitable for their supply levels.
Be mindful of Shelf Life.
In our long experience with Decaf coffees, we know the shelf life of Decaf is shorter than regular coffees.
It's not just our roasted Decafs but a universal phenomenon across all Decafs, regardless of whether it is EA, Sugar Cane, Swiss Water or Mountain Water.
How much shorter - nobody can ever say. It's about a third.
Of course, it depends upon many constantly changing factors, such as ambient temperature.
The brew or extraction method also makes a difference.
Espresso is more sensitive to freshness and vitality than long-contact brews such as Plunger.
If you use Decaf for espresso, we suggest buying enough for 60 days, perhaps a shorter period in the heat of summer.
Naturally, the quality of taste depends upon individual preferences - some people are fussy, others not. It's just a guide, not a fixed rule.
We chose the Colombian lots because of the sweet-tasting flavour and cup complexity.

Guide - Decaf coffees can swell or bloom at greater rates than conventional coffees. This is point to be aware of in case you end up choking the extraction. We suggest starting with a slightly coarser grind or dosing a fraction lower to avoid the choke condition.

Important Note on Freshly Roasted Decaf

Decaf coffee beans behave differently after roasting due to the cell structure changes caused by caffeine removal:

Appearance: Decaf beans start darker and will generally be a darker shade than standard coffees roasted to the same level.
Oil/Sheen: It is completely normal for freshly roasted decaf coffee to develop a light sheen or spot of oil on the surface within 1-3 days. This does not mean the coffee is stale or over-roasted. This is a natural condition due to the altered moisture content.

Both are water-based decaffeination methods that remove caffeine from green coffee without using chemical solvents.

Our Swiss Water Process Decaf is made from Colombian arabica coffee and offers a smooth, balanced and familiar flavour.

Our Mountain Water Process Decaf is certified organic and has a richer body with slightly more depth and character.

Which decaf coffee should I choose?

Choose the Swiss Water Process Colombia if you prefer a smooth, balanced and traditional coffee that works particularly well as espresso or with milk.

Choose the Mountain Water Process Organic if organic certification is important to you or you prefer a fuller-bodied decaf with a little more individuality.

Are your decaf coffees chemical-free?

Our decaf coffees are processed without chemical solvents. Both the Swiss Water Process and Mountain Water Process use water-based methods to remove caffeine from the green coffee.

We prefer the more accurate description “decaffeinated without chemical solvents” rather than claiming that coffee is completely chemical-free.

Is decaf coffee completely caffeine-free?

No. Decaffeination removes most of the caffeine, but a small residual amount normally remains, typically less than 3%.

A cup of decaf generally contains much less caffeine than regular coffee, although the exact amount can vary depending on the coffee, serving size and brewing method.

Does decaf coffee taste weaker than regular coffee?

Not necessarily. Decaf can taste flat when poor-quality coffee is used or when it is roasted incorrectly.

We select quality arabica coffees and roast them specifically to preserve sweetness, body and flavour. Decaf refers to the caffeine level, not the strength or richness of the coffee.

Is your Mountain Water Process Decaf certified organic?

Yes. Our Mountain Water Process Decaf is certified organic.

The Swiss Water Process Colombia is water processed without chemical solvents, but it is not sold as a certified organic coffee.

What does this coffee taste like?

Can I use your decaf coffee for espresso?

Yes. Both decafs are suitable for domestic and commercial espresso machines.

The Swiss Water Colombia produces a smooth and balanced espresso, while the Mountain Water Organic generally delivers a fuller body and more distinctive character.

Do your decaf coffees work well with milk?

Yes. Both coffees can be used for flat whites, lattes and cappuccinos.

The Swiss Water Colombia is especially approachable in milk, while the Mountain Water Organic provides a little more richness and depth.

How fresh is your decaf coffee?

As a large seller of quality Decaf, we roast our decaf coffees daily in small batches and dispatch them fresh.

As with regular coffee, freshness, correct storage and using the appropriate grind all contribute to better flavour.

Do you offer decaf coffee capsules?

Our Mountain Water Process Organic Decaf is currently available in Nespresso-compatible capsules.

Can you grind the decaf coffee for my brewing method?

Yes. Both decaf coffees are available as whole beans or freshly ground.

Select the appropriate grind for espresso, Aeropress, stovetop, filter, plunger or your preferred brewing equipment when ordering before adding the product to the cart.

Is decaf coffee harder to grind or brew?

Decaffeinated beans can behave differently from regular coffee because the decaffeination process changes the structure and moisture content of the green bean.

You may need to make small adjustments to grind size, dose or extraction time to achieve the best result, particularly when preparing espresso.

Nespresso-compatible capsules are more challenging as they tend to choke during brewing.

Is decaf coffee suitable for drinking at night?

Many customers choose decaf during the afternoon or evening because it contains substantially less caffeine than regular coffee.

However, decaf is not completely caffeine-free, and individual sensitivity to caffeine can vary.

Roasting coffee is a precise science. These days, computer profiles perform most of the automated tasks for controlling a roast profile. However, through better quality control via tasting, testing and optimization, we can make a big difference to the finished product through setting special parameters.

Roast Balance

Roast depth is a moving target for most coffee brands. It can depend upon the individual lot being roasted, ambient conditions (hot or cold) and the target brew application.

Our roast depth always targets medium (except for filter roast products that are roasted lighter).

Our medium-level roast is a combination of many factors, such as the balance of flavour, sweetness and acidity.

Roasting too far in one direction tends to pull or detract from other attributes.

Roast Profile

Our roast profile has evolved and optimized over the last 20 years.

Not much has changed in the last few years as the level of quality has essentially maintained at a consistently high range.

We roast for a medium level that takes all of the attributes into consideration - flavour, complexity, sweetness, acidity, body, aroma and finish.

Our roast profile could be described as carefully cautious - unwilling to push into zones that create an unbalanced cup taste.

Colour

Roast color is an outdated metric which no longer applies to quality coffees.

The external color of a roasted coffee bean bares little resemblance to how that coffee was actually roasted.

In the past, coffee was segmented as light, medium or dark. But those motifs did not sufficiently encompass the number of variations possible.

The external shade of a roasted coffee is more influenced by the brix (sugars) of the bean, e.g. higher brix levels may present or display darker shades of brown when roasted.

The processing method also plays a role in determining the final colour. Washed coffees are darker in shade, as are Decaf coffees, while naturals display a lighter and mottled appearance.

The roast profile also impacts the finished colour. A lighter-colored coffee may have been roasted poorly, having baked or stalled with darker internal colours.

Similarly, a lighter external color might hide the darker internals from scorching or rapid roasting using an invalid profile.

Dark does not mean stronger. In fact, dark is weaker as acid and caffeine levels decline.

Acidity

Acidity is perhaps one of the most complex and mis-understood attributes of roasted coffee.

Acidity is a fundamental requirement for flavor, in fact acidity is the pathway of flavor compounds.

Customers often ask for low—or zero-acid coffees. However, those coffees with very low acidity typically display dull, mediocre, and boring cup elements.

Australian coffee drinkers are predominantly milk or dairy alternative drinkers. In fact 93% of coffee drinkers add something else to the coffee besides sugar.

Acids are mostly grouped as citric or malic. When coffee is roasted well, the acidity should result in delicious sweetness.

However, the extraction or brew process can also affect the taste.

Whole bean coffee stays fresher for much longer than ground coffees

Ground coffee is poor value

Whole beans are the only way to enjoy freshly roasted coffee.

The moment coffee beans are ground, most of the essential, active compounds in ground coffee oxidize rapidly, losing vitality, aroma, flavour and body.

Ground coffee barely lasts 15 minutes; even sealed packs lose more than 80% of the critical essence in 2 weeks.

Unfortunately, once you open and close that pack, it's game over, and the ground coffee continues to stale at 20x the rate of whole beans inside of a sealed, unopened pack.

If you love coffee, please don't waste money buying pre-ground packs; you only get a small part of the wonderful coffee experience.

Buy a decent grinder and purchase whole beans; it makes a huge difference in aroma, flavour, and enjoyment.
