It's been a while since we have seen a 90+ point coffee in our warehouse and last month we nabbed an amazing lot scoring 92+. It's actually been rated at 93 points, but let's not get too far ahead of ourselves.
This special and unique lot of Sumatra Blue Bianca sits in a class of it's own.
Rarely will Sumatran coffees score above 85 points. Rarer still is any Sumatran coffee scoring 90+.

Whilst that might not sound appealing, let me tell you this is a powerhouse coffee and a true coffee bucket list experience.
Grown at 1,400 metres above sea level in the Dolok Sangul region of Sumatra using the Ongang Ganjang varietal (a type of local Bourbon), every stage of this coffee is carefully managed and undergoes strict quality checks.
Fresh cherry is picked, pulped and fermented for 12 hours without water. The cherry is hulled and parchment washed and left to dry for two day, parchment is then removed using the Giling Basa process of wet hulling, a process unique to Sumatra.
Green beans are allowed to dry for a further 5 days after which they are hand sorted and left for a period of 30 days to rest before ready for shipping.
This is a truly unique coffee that stands out as distinctive, bursting with character and setting a standard for top end Indonesian coffee.
Blue Bianca is one of the most difficult coffees to roast (only Monsoon Malabar is more challenging) and we will only roast this special lot on our smaller precision platform, therefore we have lower output compared to our other coffees. This may mean a 1 day delay in dispatching if the stock sells out too fast on any day.
Like all Sumatrans, Blue Bianca requires a finer grind setting and longer de-gas and flavor development periods from roasting.
Typical rest periods for Sumatrans are around 10+ days from roast date.
Sumatrans often go through a series of "rapid flavour transformations" during the de-gas period whereby the flavours are changing so fast from day to day you would hardly recognize the coffee one day to the next.
This strange reaction generally occurs between days 4 and 10 from roast date. At times, the coffee may appear less than optimal, but it's a normal and standard lifecycle for the reactions of fresh roasted Sumatran coffees.
Suddenly, they turn nice and then it's a wonderful experience. If you encounter this sort of response from the coffee, please wait a few days for the development period to complete and the rewards will be well worth it.
