There are 3 different processes for converting fresh roasted coffee beans into instant granules - spray dried, agglomerated and freeze-dried.
Freeze-dried process is regarded as the best method - producing superior freshness, flavor and aroma. It's also the most technically challenging and expensive method to produce instant coffee with yields close to 50%.
We have a lovely Single Origin Brazil Freeze Dried Instant coffee available in our store, packed into a 250g foil lined stand up pouch with zip-lock (other sizes available in 150g and 250g) - ideal to keep in the freshness.
The first thing you will notice is the colour - it's lighter, and that's because the freeze dried process is remarkably different to the other methods of preparing instant coffee.
It's also lighter because Brazil coffees are naturally processed (the coffee cherry is sun dried) and the roasted beans have a much lighter shade of brown compared to most washed arabica coffees.
As with most quality Brazil coffees you can expect the cup to have notes of nut and milk chocolate as the dominant features.

The agglomerated process results in a finer, darker appearance of the instant coffee granules.
Instant coffees have fallen out of favour in recent years with Australian coffee drinkers, largely disrupted by the popular cafe culture, espresso equipment on kitchen benches and the rise of capsule and pod systems.
