There are three different processes for converting fresh roasted coffee beans into instant granules.
Spray-dried, agglomerated and freeze-dried.

Freeze-drying is the most technically challenging and expensive method for producing instant coffee with yields close to 30%.
For every 100 kilos of expensive roasted coffee, barely 30kg of instant is produced and goes towards explaining why Instant coffee is expensive.
