The Pluma region coffee beans are a beautifully prepared organic coffee, the Pluma region is highly elevated at around 1,300 meters.
Both Mexico and Peru are now producing high quantities of organic certified coffees and making their presence felt in that market.
Organic Mexican coffees tend to have a rich, smooth and clean cup best suited to milk-based espresso as mentioned above.
They develop a wonderful milk-chocolate finish that is textured and sweet as the cup cools.
There is a treacle-like choc sweetness to this cup. YUM.
The current lot we are offering from April 2019 onwards is a fresh arrival from a premium Mexico estate highly regarded for producing exceptional coffees.
What I loved about this lot in particular was the interesting complexity of the coffee as it cooled - changing elements of spice, teas and citrus sweetness.
Having roasted this coffee a few times over the last few weeks, I have taken to bringing home the control samples to enjoy as my first and most important cup of the day.
Another reason why I think this coffee is special - it is versatile across both black and milk-based brews.
I am also amazed at how the coffee keeps on improving and holding it's characteristics for at least 20 days from roast date - the sure sign of a quality coffee.
