Coffee beans are processed from cherries picked from a tree.
Depending upon the location, soil conditions, weather patterns and the varietal, those cherries growing on the coffee trees have a wide spectrum of flavors and attributes.
Some of the most desired coffee characteristics involve fruits. It's the fruit in a coffee that can govern the prices paid and high levels of sweet fruits in a coffee command premiums.
But many coffees don't have fruits in the cup, instead it might be nut, caramel, toffee, chocolate, malt, etc.
So the fruity lots are considered desirable and expensive.
We know that fruit in the cup creates interesting complexity and generates unique outcomes. It's a way of differentiating your product from everyone else.
Preserving that fruit in coffees is not easy - we must be careful in roasting to enhance the natural fruit elements.
But too much fruit in a coffee can easily confuse or annoy drinkers. Getting that balance right is the key to success.
It would be easy to just take some sun-dried, naturally processed Ethiopians, like our Bensa or Harrar, and produce a fruity compote.
Whilst it may appeal to the fruit-driven enthusiast who drinks black coffees, it may also offend or not hit the spot with the broader majority of coffee drinkers - the other 90%.
