Everyone thinks a Northern Italian-inspired blend should be dark roasted. We disagree.
The reason they roast dark is because they source lower-grade, defect-laden beans that must be roasted dark so the taints and defects disappear up the chimney.
This is a medium-dark roast, although roast level is really a very misleading indicator these day.
We roast this coffee to a point that balances the true character of the beans, the fruit and the caramelization of the sugars.
If you are looking for a dark roast with tons of bitter bight, can I suggest the supermarket shelves - this espresso is about rich, smooth, sweet flavors.
